The Washed Process (Fully Washed)
In the washed process, coffee cherries are pulped, fermented in water to remove the mucilage (the sticky fruit layer), then washed and dried.
- Flavor profile: Clean, crisp, and bright.
- What you’ll taste: Clear acidity, floral or citrus notes, and the bean’s natural qualities shining through.
☕ Almost all Saint Basil coffees are washed process because they showcase the environment of Colombia—its fertile soils, high altitudes, and careful generational farming practices.
The Wet-Hulled Process (Giling Basah)
Commonly used in Indonesia, wet-hulled (or giling basah) is very different. After fermentation, beans are partially dried, hulled while still moist, and dried again.
- Flavor profile: Heavy-bodied, earthy, and bold.
- What you’ll taste: Deep, smoky flavors with a rustic edge.

The Natural Process (Dry Process)
The oldest method, natural processing, dries the beans inside the cherry itself. The fruit imparts sugars and complexity as it dries around the seed.

- What you’ll taste: Blueberry, strawberry, or tropical fruit notes depending on origin.
